    Sweet Baby Ray’s Meat Marinade

    6 ounces Sweet Baby Ray’s BBQ Sauce
    3 ounces red wine vinegar
    6 ounces Wishbone Italian salad dressing
    3 ounces dry white wine (optional)

    Combine ingredients and marinate meat from 2 to 12 hours before cooking to add a unique flavor to your meat.

    Al Roker’s World Famous BBQ Rub

    1 cup brown sugar
    1/2 cup freshly ground black pepper
    1/2 cup salt
    1/2 cup adobo
    3/4 cup paprika
    3/4 cup chili powder
    2 tablespoons each cinnamon and allspice

    Mix all ingredients together mixing well. Store in an airtight container.

    Use for slow cooked foods or as a spice for your meats and poultry.

    Super great for barbecued chicken, wings or whatever.

    Ace High Barbecue Sauce

    This is from a book of old cowboy recipes, collected by ‘Wild Wes’ Medley, the Rodeo Champion, and published by him as The Original Cowboy Cookbook. If you can find a copy, cherish it.

    1 cup strong black coffee
    1 cup Worcestershire sauce
    1 cup catsup
    1/2 cup cider vinegar
    1/2 cup brown sugar
    3 tablespoons hot chile powder
    2 teaspoons salt
    2 cups chopped onions
    1/4 cup chopped green chile peppers:
        jalapeno, serrano, habanero, etc.
    6 cloves garlic, minced

    Simmer 25 minutes; puree or blend. Use as a marinade and a baste when barbecuing.

    7-Up Basting Sauce

    Source: 7-Up? cookbook – 1969

    1/2 cup butter, melted
    1 cup 7-Up?
    2 tablespoons lemon juice
    1/2 teaspoon salt
    Dash of cayenne pepper

    Blend ingredients in a saucepan and heat just until simmering. Remove from heat. Baste poultry or fish every 15 minutes during broiling or baking period.

    Makes 1 1/2 cups sauce.

    Teriyaki Marinade for Chicken

    1 cup soy sauce
    2 teaspoons sesame oil
    Juice of 2 oranges
    Zest of 1 orange
    2 tablespoons brown sugar
    2 tablespoons honey
    2 teaspoons garlic, minced
    1 tablespoon ginger, minced
    1 teaspoon sesame seeds

    Blend all ingredients.

    Spanish Rib Sauce

    This is an old recipe that I have been using for YEARS. I used it last with some baby back ribs…so good!

    1 cup catsup
    1 cup water
    1/4 cup apple cider vinegar
    1 tablespoon Worcestershire sauce
    2 cloves garlic, minced
    2 tablespoons brown sugar
    2 tablespoons molasses
    2 tablespoons dry mustard
    2 teaspoons chili powder

    Combine all ingredients and pour over chicken pieces or ribs. Marinate for several hours. Bake or barbecue.

    Rajun Cajun Bourbon Sauce

    1/2 cup plus 1 tablespoon dark brown sugar
    1/2 cup blended Bourbon
    1/2 cup Heinz ketchup
    2 teaspoons Liquid Smoke
    1 clove garlic minced
    1 tablespoon minced onion

    In a saucepan combine brown sugar, and bourbon. Turn heat to medium and mix well. Add Ketchup and remaining ingredients. Stir until all is well blended. Heat through for about 15 – 20 minutes. You want to make sure the alcohol cooks away.

    You can use this as a basting sauce for BBQ, or you can spoon it over chicken breasts and pop those into a 400 degree F oven covered for about 30 minutes.
